Job Description
Seeking a highly experienced Chef de Cuisine to oversee all aspects of BOH operations at DipDipDip, the new shabu shabu restaurant from Tatsu-Ya Group.
• Daily operations of the back of house, including: organization, running daily and weekly meetings, training of staff, adherence to quality standards, cleanliness and equipment maintenance
• Running service, including: opening/closing duties, expediting service, management of employees
• Maintaining the highest possible standards of food execution and presentation, including: auditing food quality, daily tastings, new dish/seasonal special creation (in collaboration with Executive), coaching and mentoring kitchen staff
• Food costing and inventory management, including: purchasing, inventory, and cost maintenance
• Continuing education and development of yourself and your staff with support from the Tatsu-Ya organization
Responsibilities
- • At least 3 years experience in a kitchen leadership role (Sous Chef level and up) at a high quality dining establishment
- • At least 8 years total professional cooking experience
- • A deep commitment to creating and serving the highest quality of food possible
- • Excellent communication skills in verbal, written, and digital forms; able to clearly communicate ideas to a wide range of personalities in a variety of settings
- • A neat and organized mind; comfortable with a variety of organizational tools and systems
- • A positive "can do" attitude; able to effectively tackle projects and calmly troubleshoot problems
- • An urgent sense of work ethic; eager to accomplish as much as possible in a given amount of time
- • Ability to work well with others; able to effectively collaborate on projects with a deep sense of teamwork
- • A creative mind; able to create new flavors and dishes, and to think outside of the box about food and restaurant operations
