About this location
About The Barton House
After years of knowing each other and watching each other’s great work respect was born between Chef Jacob Hilbert and proprietor and wine curator Clinton Harwell. Clinton Harwell’s status as a wine director is unparalleled in the region and has garnered international recognition for the lists he has built. The Barton House will be no different. When the opportunity to work together to restore and revitalize the gorgeous Barton House presented itself a relationship was formed. Both bring years of knowledge, experience, and commitment to service to create an experience like no other in Central Texas.
We are not bringing a new experience, we are bringing an old one, one that evokes memory and history in every room and on every plate. Sometimes the best secrets are hidden in the past. Clinton Harwell and Chef Jacob Hilbert both have a passion for growing and nurturing (evident in the ever-expanding gardens around The Barton House). “We want to know our ingredients thoroughly, and the best way of accomplishing it is by growing them ourselves.” - Chef Jacob.
Eventually, the garden will play host to heirloom produce long forgotten yet revered in the narratives of the past. In due course, we want to create a habitat for challenging parts of the ecosystem inclusive of butterflies and caterpillars. The garden, like the restaurant, will grow and evolve as we do so as well.
