Job Description

Job Purpose: Washes and properly stores all dishes, trays, eating utensils, cups and small equipment for the BOH. Maintains the dish room and dish machine in a sanitary and efficient manner.

ESSENTIAL FUNCTIONS

Essential Functions Statement(s)

* Washes and stores all dishes, trays, utensils, cups and small equipment in the proper locations for the BOH.

* Keeps dish area clean and sanitized.

* Checks machine to be sure it is operating correctly and reports any defects immediately.

* Changes water every 2 hours in dish machine.

* Checks water temperature during dishwashing operation to ensure proper temperature.

* Changes out sanitizer buckets every 4 hours.

* Proper set up and usage of 3 base sink for heavily soiled items.

* Understands the usage of each chemical and proper ratio.

* Removes all trash from dish area and places it in dumpster.

* Cleans and sanitizes garbage cans and relines all cans.

* Responsible for the cleanliness of the parking lot.

* Adheres to back door security policies at all times.

* Communicates with kitchen on their needs.

* Completes bus tub pick up on line.

* Properly breaks down and cleans the dish machine and the dish area at the end of the shift. This includes polishing, removing paper, and hosing down interior.

* Understands basic sanitation practices.

* Ability to work long hours in a damp environment.

* Ability to communicate in the primary language(s) used in the workplace desirable.
