Job Description
*PIZZA MAKER*
Pazzaiola handles the majority of the prep for all ingredients going into dishes during service. This position often works under little supervision, so you must be able to follow recipes and be well-versed in a variety of food products and techniques. The quality of the prep work is instrumental in the quality of the finished product, so attention to detail is paramount.
Responsibilities
- Prep duties such as washing and chopping vegetables or cutting meat
- Label and stock ingredients on shelves
- Measure ingredients and seasonings
- Basic kitchen duties like reducing sauces or parboiling
- Prep simple dishes such as soups and salads
- Maintain a clean and orderly kitchen
- Follow nutrition and sanitation guidelines

In order to be considered authentic Neapolitan Pizza, 10 strict requirements must be met. They include using “00” flour, DOP Certified San Marzano Tomatoes, stretching or “opening” the dough only by hand, and cooking in a wood-fired oven at roughly 900° in less than 90 seconds.
The Pizzaioli at Campania treat each pizza they create as a journey to the origin of pizza. Using traditional double zero flour, natural yeast and sea salt, we construct a delicious canvas for our authentic ingredients. We use only imported San Marzano tomatoes for our homemade Pomodoro sauce. We use authentic, imported Italian meats such as, Calabrese salami, Parma Cotto, Prosciutto di Parma, and Italian sausage, and cheeses such as, Mozzarella di Bufala, Fontina, Provolone, and Parmigiano Reggiano.
