Job Description
The prep cook (aka Kitchen Staff) handles the majority of the prep for all ingredients going into the line during service. This position requires same prep work daily and is quick to learn by following recipes and be well-versed in a variety of food products and techniques. The quality of the prep work is instrumental in the quality of the finished product, so attention to detail is important.
Responsibilities
- KITCHEN STAFF DUTIES AND RESPONSIBILITIES:
- Prep Station:
- Follow prep standards for vegetables, meats, and cheeses and prepares quantities shown on
- daily PAR sheets.
- Responsible to slice and pack meat as per daily PAR requirement.
- Wear cutting glove when slicing meats.
- Cover, label and store at proper temperatures all vegetables, meats, and cheeses.
- Prepare all salad mixes according to recipe standards and procedures.
- Prepare all soups according to recipe standards and procedures.
- Slice buns according to established procedures and wear cutting gloves when performing this
- function.
- Clean prep stations according to safety and sanitation guidelines at the end of each shift.
- Meat, Cheese & Finish Station:
- Follow recipes and read customer tickets to accurately prepare all orders.
- Work at a pace to maintain restaurant's established speed of service guidelines.
- Maintains a clean workstation at all times.
- Pizza Station:
- Follow recipes and read customer tickets to accurately prepare all orders.
- Place pizzas on plate or "to go" container according to established standards.
- Work at a pace to maintain restaurant's established speed of service guidelines.
- Maintains a clean workstation at all times.
- Soup and Salad Station
- Follow recipes and read customer tickets to accurately prepare all orders.
- Place food on plate or "to go" container according to established standards.
- Work at a pace to maintain restaurant's established speed of service guidelines.
- Maintains a clean workstation at all times.
- Other Responsibilities:
- 1. Consults with management regarding customer issues.
- 2. Maintains a positive working relationship and treats all employees with respect.
- 3. Must become familiar with and adhere to all Company policies and procedures.
- 4. Must maintain a positive attitude and follow the direction of managers at all times.
- 5. Must adhere to strict safety and sanitation standards.
- 6. Report to work timely for each scheduled shift.
- 7. Arrive and depart from work meeting all uniform and grooming standards.
- GENERAL AND PHYSICAL REQUIREMENTS:
- Must at least 18 years of age in order to operate certain bakery & kitchen equipment.
- Must be a self-starter and be able to work independently of others.
- Should be proficient and knowledgeable of procedures for all kitchen stations and guest service stations.
- Must have multi-tasking skills to coordinate several tasks during various stages of the baking
- process.
- Essential functions of the position include, but is not limited to:
- Lifting and carrying a maximum of 50 pound
- Lifting a full 33-gallon trash bag from trash container.
- Bending and lifting heavy dough tubs to and from the proofer.
- Performing repetitive arm and hand squeezing and flexing.
- Working around extremely hot equipment and handling hot pans while wearing baking mitts.
- Repeatedly lifting and turning body while sliding bakery sheet pans in and out of the proofer and
- bakery oven.
- Standing throughout a scheduled shift.
- Performing repetitive hand and arm motions.
- Bending, stretching and kneeling to reach certain products or clean certain areas of the
- restaurant.
- Certain job functions require ability to perform repetitive slicing motions with a sharp knife.
- Certain job functions require ability to handle hot food by hand for several seconds at a time,
- throughout a scheduled shift
- Adhere to strict safety and sanitation standards.
- Report to work timely for each scheduled shift.
- Arrive and depart from work meeting all uniform and grooming standards.
- Must become familiar with and adhere to all Company policies and procedures.
