Job Description
The prep cook handles the majority of the prep for all ingredients going into dishes during service. This position often works under little supervision, so you must be able to follow recipes and be well-versed in a variety of food products and techniques. The quality of the prep work is instrumental in the quality of the finished product, so attention to detail is paramount.

The concept of Souvlaki Fast was born while founder, Roulis, and his wife, Margaret, were on vacation in Thessaloniki, Greece.
At the time, Margaret was pregnant and very sick – almost all food made her nauseous and her condition was worse in a country full of unfamiliar flavors. In an attempt to find relief, Roulis took Margaret to a food court in the mall so she would have options. She stumbled upon a souvlaki restaurant that offered individual skewers, salads, rice, and the like. The food was fresh, healthy, fast and the simple flavors appealed to even the most discriminating taste buds.
Roulis realized that the everyday food of his country was largely missing from the culinary landscape of South Florida. Equally as important, this food could be served in a fast casual setting allowing diners to eat healthy, delicious food in a hurry. Within a week of his son’s birth, Roulis signed a lease on the first Souvlaki Fast location and opened it the following summer. In the years since, Souvlaki Fast has opened locations in Boca Raton, Palm Beach Gardens, Boynton Beach, and Royal Palm Beach.
