Job Description
As the Sushi Chef, you’ll take complete responsibility for every plate that gets served and the overall direction of the menu. You’ll be expected to innovate and iterate on the menu to provide creative, quality food while meeting profit goals. You will be responsible for hiring and supervising the kitchen staff and coaching employees on consistency, technique and skills.
Responsibilities
- Create menus
- Direct the food prep process
- Plan & order ingredients and necessary equipment
- Arrange for kitchen repairs when needed
- Use P&L statements to effectively manage costs and meet budgets
- Hire, manage, and train kitchen staff
- Oversee kitchen staff, looking for opportunities to counsel or coach
- Foster cooperation, collaboration and respect
- Have knowledge of and enforce all safety and sanitation requirements

Four years later, in 2002, following the success of the first restaurant, we opened the second Kokai restaurant in Maracay, Venezuela. We were “the first” Japanese restaurant in the city. We not only brought sushi to Maracay but also a place where people could get together and enjoy a delightful dining experience.
Then in late 2006, following strong expansion and growth projections at the national level, we conceived our third venue in one of the most important cities in Venezuela: Maracaibo. Today, with more than 20 years of experience, we take pride in offering one of the finest sushi in Venezuela, crafting innovated flavorful sushi dishes and offering an unequaled service and quality.
